Pickled Green Beans

Pickled anything - is there anything like it?  That acid, brine and saltiness can cut through rich strong flavors like nothing else!  What pairs perfectly with these pickled green beans?  A fiery Bloody Mary - it's a perfect start to a Sunday morning brunch!

Pickled Green Beans

Pickling Liquid:
  • 1 cup hot water
  • 1/2 cup white vinegar
  • 1/2 cup apple cider vinegar
  • 2 tablespoons of non-iodized salt

Enough beans to loosely fill a pint jar

  • 5 or 6 crushed garlic cloves
  • 5-6 sprigs fresh dill (or 2-3 teaspoons dry dill)
  • 1 tablespoon peppercorns

Put the fresh beans, garlic, dill and peppercorns in a jar.  Make and per the pickling liquid over them.  When room temperature, close the jar and refrigerate at least an hour.  Enjoy!
